Peanut Butter Chocolate Ice Cream Pie with Blue Bunny®

Isn't it funny how recipes can conjure up memories of certain times in your life? 
I worked my way through college by waiting tables at a restaurant that was down the street from my house. Their signature dessert was a delicious Peanut Butter Ice Cream Pie. It was seriously one of the best desserts ever! 
When I came across this delicious Blue Bunny® Bunny Tracks® at Walmart, I knew it would be the perfect way to recreate that delicious pie I remember!
Blue Bunny® is available at Walmart stores all over the country. Look at all those flavors!!


And, since we were already there and it IS summer after all, we picked up a few other flavors and also some The Original Bomb Pop® as well, because they are my little guy's favorite! 

So here's what you need to make your own AMAZING Peanut Butter Chocolate Ice Cream Pie! It's so easy that you aren't even going to believe it!



Blue Bunny® Bunny Tracks® ice cream (If you want a tall pie like mine, use two tubs)
1 graham cracker pie crust (unbaked)
12 peanut butter cups
1 cup chocolate syrup

Let the ice cream sit on the counter for a little bit (20 minutes or so) to soften up and make it easier to spread into the pie crust. 
For your first step, pour chocolate syrup into the pie crust. Just enough to coat the bottom of the pie. 



Cut your peanut butter cups into halves. 

When your ice cream has softened, spread it into the pie crust and use a spatula to smooth the top. 
You will need to work fast to prevent melting. Once it you have the top smoothed, add the peanut butter halves around the perimeter of the pie. Chop the excess halves and add them to the top. 

When you are finished, top with the rest of the chocolate syrup. 

Freeze overnight or at least 6 hours to allow the pie to set up. 
Serve frozen and top with additional syrup. 


Look at that inside!  The Bunny Tracks® flavor is filled with fudge and caramel swirls, chocolaty covered peanuts, and peanut filled chocolate bunnies!  You can't beat that!  Salty and sweet is my favorite combination! 


This is a guaranteed crowd pleaser! 

This recipe would also work great with other Blue Bunny® flavors too!
Use Blue Bunny® Cherrific Cheesecake instead and add cherries on top! 
Or another great one combo would be the Blue Bunny® Mint Cookie crunch with chocolate sandwich cookies on top! The possibilities are endless! All these flavors are perfect treats for your family.
